Greenhouse, vegetable gardens and restaurants

A philosophy of self-sustainability links the Monsordo Bernardina Estate with our restaurants in Alba: Piazza Duomo and La Piola

 

In the greenhouse and the vegetable gardens seen here, the vegetable gardeners supervise the cultivation of the vegetables that inspire many of the dishes of the chef, Enrico Crippa, such as the famous “21, 31, 41, 51…” salad, which takes its name from the incredible number of species of herbs
and greens used to prepare it. 

 

Each evening when the Piazza Duomo closes, the detailed order is sent for the “shopping list” of greens and aromatic herbs. The next morning, at 8 o’clock,
the chef himself passes to pick up the green bounty: this is the chance to taste a few leaves and have a talk with the gardeners. You can never tell where an idea for a new recipe may spring from.
